Last night was the finale of Top Chef Masters, and Rick Bayless WON! It was very exciting.
What was also exciting was how yummy the Queso Fundido burgers turned out. The only time consuming part of the recipe is roasting, peeling and seeding the poblano pepper, but really not that big of a deal--don't let it deter you! I overcooked the burgers, just an eeensy bit, but otherwise SO GOOD. Although my husband suggested just a bit more chorizo...not surprising! So go make the recipe!! As a side I sliced up some Jicama and tossed it with some lime, salt and chile--very appropriate! The beers were cool and refreshing, but I think I prefer just the plain ol' salt and lime Micheladas. But maybe the Jugo Maggi was the magic ingredient, which I was unable to find...albeit I didn't really have a chance to beyond Ralphs to the Latin market, because a certain one year old was not enjoying the car yesterday. I also had planned to serve cajeta over vanilla ice cream, but again, the trip to the Latin market was nixed. So plain vanilla it was.
It was a perfect ending to the Top Chef Masters series, as well as a great summer menu to file away.
